About Bohemian Biergarten
Borrowing from his roots, owner Zdenek Srom welcomes guests into a biergarten that reflects the aesthetic of rustic charm, with original brick walls, tables built out of 150 year-old reclaimed lumber, and light fixtures that date back to the early 1900s. This inviting scene pairs beautifully with Executive Chef Michael Clancy’s approach to central European cuisine.
One can find joy in simply getting cozy with a giant pretzel dipped in grain mustard and bier-cheese, washed down with any number of pilsners, dunkels, or local draughts. Then, imagine a country-style pâté that is available not just as a stand-alone treat, but pressed between a warm pretzel baguette as a sandwich with butcher’s mayonnaise, or Czech-style gnocchi served with crispy bacon and forest-mushroom ragoût. These are just some of the creations gifted by Chef Clancy, who takes inspiration from working under Antoine Westerman at the Michelin-starred Le Buerehiesel in Strasbourg, France. Chef Clancy combines the simplistic elegance of traditional techniques with locally-sourced and seasonal ingredients. Bohemian Biergarten has brought a piece of Europe to the heart of Boulder.
